Herbs: Harvesting Guide

When harvesting herbs, it’s best to do so in the morning when their essential oils are at their peak. Use sharp scissors to make clean cuts above a set of leaves, which encourages bushier growth. Avoid harvesting more than one-third of the plant at a time to allow for regrowth. To preserve harvested herbs, dry them in a well-ventilated area or freeze them in ice cube trays with water or oil.
